Marinated Veggie Kabobs (RAW VEGAN)

Marinade:

4 oz. Lemon Juice

4 Cloves Garlic

2 Tsp. Paprika

1 T. Kelp Powder

3 T. Chopped Fresh Parsley

4 T. Pizza Seasoning

1 Tsp. Garlic Powder

7 oz. Organic Cold Pressed Extra Virgin Olive Oil

Veggies for Kabobs:

1 Large Yellow Squash

2 Red Peppers

1 Large Red Onion

1 Large Zucchini

16 Cremini Mushrooms w/stem removed

 Technique

  1. In a blender, mix all marinade ingredients.
  2. Place vegetables on a skewer to your liking or as follows: a mushroom, a sliced zucchini, a sliced red onion, a square red pepper, a sliced, yellow squash, a sliced zucchini, a sliced red onion, a square red pepper, a sliced yellow squash, and a mushroom.
  1. Roll in marinade.
  2. Put in dehydrator on Teflex sheets or parchment paper.
  3. Dehydrate for 3-8 hours.

 

Although this recipe is intended to be eaten raw once dehydrated if you prefer you may bake on low heat (325F) for about ½ hour or grill on low until just softened.

Please Note *** Over cooking and cooking at high heats kills the enzymes in the foods which are beneficial to digestion and absorption of nutrients.
